I LOVE summer!
I LOVE stone-fruits!
Not so keen on the rain,
but with jam boiling on the stove, everything feels right!
I weigh the fruit out at the beginning.
My method is fairly rough after that.
Wash and de-stone the fruit.
Then I put some water to cover the bottom and bring to the boil,
then simmer until the fruit is breaking down.
Now, I've tried several times to make jam without sugar.
But it never sets properly.
So this time I have added sugar, about 2/3 of the original weight of my fruit.
Feeling a bit decadent?

though i haven't tried it yet]
I used organic raw sugar, which has changed the colour now
of the hubble bubble in the pot.
I've added green apple and the juice of about 1/4 lemon for pectin,
to thicken and balance the flavour.
Now the set test (well the taste test)...
and again.... until it's all gone.
Jars are washed and then warmed in a low oven.
Lastly filled with the hot jam,
straight from the stove.
