Winging it with Cashew Halva

No pistachios in the mix, but thought they looked pretty!
Definitely no complaints on the garnish around here.

So, I 'slightly over-baked' some cashews I was dry roasting.
Not wonderful to snack on solo...so considered other uses...
Mmmm, let's try Halva!

Soaking seemed essential.

Then after draining, we put them into the processor (about 2 cups)
and added about 1/2 cup of honey and 1tspn of vanilla.
Blended them up and then ~
Very easy to spread into my lined dish. But perhaps a little wet?
Ok, straight into the fridge!
A few hours later, yes still a little soft, but ever so scrummy.
Happily it was a perfectly temperate afternoon to enjoy Buddha's Tears tea
(in my special tea cup reserved solely for this tipple)
& a yummy sweet snack.
