Healthier Gingerbread People

We love baking together
When there's decorating, it is even more fun ♥

RECIPE:
Gingerbread People
125g butter, at room temperature
100g rapadura sugar
55ml maple syrup
70ml molasses
1 egg yolk, (separated egg)
375g wholemeal spelt flour, sifted
1 T grated fresh ginger
1 t mixed spice
1 t bicarbonate of soda
Nuts, seeds & dried fruit to decorate

Preheat oven to 180°C. Line 2 baking trays

Beat the butter and sugar in a bowl until pale and creamy. Add the syrups and egg yolk and beat until combined. Stir in the flour, ginger, mixed spice and bicarbonate of soda. Turn onto a lightly floured surface and knead until smooth. Press dough into a disc. Cover with plastic wrap and place in the fridge for 30 minutes to rest.

Place the dough between 2 sheets of baking paper and roll out until about 4mm thick. Or flour well. Use a gingerbread person (or other ) cutter to cut out shapes. Place on trays a little apart to allow some spreading.
Repeat with any excess dough.
Allow your children to freely, healthily, decorate!

Bake in oven for 10 minutes or until brown. Remove from oven. Transfer to a rack to cool.
