Dhal and Chapatis

our Dhal Recipe ~
(a family favourite, adapted from
‘Family Circle Asian Vegetarian recipes’)
You'll need...
1 C red lentils
1 piece kombu

pinch saffron
3C water
I /4 t ground turmeric

1 T ghee
1/2 teaspoon brown mustard seeds
1 T cumin seeds

1 onion, finely chopped
2 cloves garlic, finely chopped
1 T grated fresh ginger
1/2t ground coriander 

2 curry leaves
2 green chillies, seeded, halved lengthways

Salt & pepper to taste
1/4 cup lemon juice
2 T finely chopped fresh coriander leaves

And how...
1. Place the lentils, saffron & kombu in a saucepan, cover with water and bring to the boil.
Reduce the heat, stir in the turmeric, then simmer, covered, for 20 minutes, or until the lentils are tender. Remove the kombu.

2. Heat the ghee in a pan, add the mustard and cumin seeds and cook until the mustard seeds begin to pop.

3. Add the onion, garlic, ginger, ground coriander , curry leaves and chillies. Cook for 5 minutes on low heat , or until the onion is golden.

4. Add the lentils and another I/2 cup water. Season with good quality salt and pepper.
Reduce the heat and simmer for 10 minutes.

5. Remove from the heat, stir in the lemon juice coriander leaves.
and serve with homemade Chapatis...
